Weird, nothing stands out in the logs.
I’ve personally never encountered this, but there are a few threads that have discussions of similar issues here and here.
All I can think of is running ~/umbrel/scripts/app restart bitcoin and then checking logs for a more relevant error that matches one of the threads above.
