Is it possible for Umbrel to include a Tor server app in Umbrel? Like have an app in Umbrel that turns your pi into a middleman or exit node? I imagine if thousands of Umbrel nodes were running Tor it would help Tor alot since Umbrel uses Tor by default anyway.

I was actually just wondering the same thing, I wonder if it takes a more powerful machine?
Since it’s the same software, additional configuration in torrc file as well as port forwarding is needed to become a tor bridge, relay or exit node. But be aware that tor recommends routing devices that can handle 7000+ connections (most privately used routers/modems just can not) to help the network effectively. Plus for privacy issues, I would not want to run a bitcoin/lightning node in combination with an exit node.
