Nodes backup . Who/what is the cloud infrastructure?

New owner. Just love it. My biggest issue/question:

The nodes are automatically backed up . But WHERE? If it’s Cloudflare, they are not my friends.

Encrypted or not, what prevents the company from stopping the service ?
